Made these a couple of days ago and they were yummy - thought I'd post the recipe for anyone who doesn't get the mag:
Chocolate and Apricot Brownies
Ingredients:
3 1/2oz/100g Low Fat Spread suitable for baking
8 Level tbsp Drinking Chocolate Powder
2 1/2oz/71g Caster Sugar
3 Eggs
3 1/2oz/100g Self-raising Flour
1 tsp Baking powder
9oz/255g Dried apricots
1 tsp Vanilla Essence
4 tbsp Artificial Sweetener eg. Splenda
Method
Preheat the oven to 180C/350F/Gas 4 and line a 12 x 8 inch baking tin with non-stick baking parchment. Melt the spread in a pan, remove from the heat and stir in the drinking chocolate, sweetener and sugar. Add the eggs and whisk until well blended.
Sift in the flour and baking powder and stir. Chop the Apricots, add to the mixture with the Vanilla Essence and mix. Pout into the tin and bake for 18-20 minutes or until just set. While it is still warm, turn the mixture out onto a board and cut into 24 brownies.
4 Syns per brownie on all choices
I have to say it only made about 14 'me-portions' brownies but they were good Also I used dried dates instead of apricots as they taste like toffee but they are more syns so if you do the same use about half the weight of apricots. Enjoy!
