Any ideas for packed lunch that is not salad?

I would realy like some ideas for packed lunches for myself and my 13 yr old daughter. Found a recipe on SW site for mini quiches made with ham instead of pastry case which sounds good, thought I might try making some with a jacket potato outside so they will travel better.
 
SW quiche (search for recipe!). It holds together well because the egg makes it set. If you cut a piece off from a large quiche, or make mini ones, they will keep together well in a lunch box! When I was at uni I always had quiche, it was lugged about in my huge bag all day but looked fine when it came to eating it. No need for jacket potato!

Cooked pasta, you can have extra light mayo (check syns) and tuna, or mix some pasata with herbs/peppers/onion/garlic etc. Chill overnight and you have a yummy cold tomato pasta dish.

You can have sandwiches - have the bread (wholemeal) as a HEb and go for free fillings.

Cous cous is also a good choice - you get plain cous cous and flavour it up how you like or buy the cous cous packets, like Ainsley Harriot ones, but these do usually have a couple of syns so best check first.

Thanks. Trouble is my daughter is fed up with sandwiches and is very fussy about veg. Salad is out of the question for her. I love salads but I too am getting a bit fed up with them. I have found the SW recipe on the website and will try it out. Do you have to use cotage cheese have you tried it with Quark?
 
I make the quiche as follows and do not add quark or cottage cheese but it is really tasty and soon zooms out of the fridge

1 onion chopped
Bacon chopped (4 slices is enough)
Spray a pan with fry light, fry above till soft
Put in a dish with a tin of drained tuna (this gives the base of the quiche)
beat up 4 eggs and season, pour over the top of the bacon, onion and tuna.
Put sliced tomato and sliced mushroom on top
and bake in oven for about 40 mins, you will know when it done when a knife comes out clean.

This cold and sliced up is lovely in a lunchbox, you can leave out the tuna. I used to have this for lunch and i am a very picky eater.
 
I liked the quiche but daughter didn't. Back to drawing board. Have made some chicken and egg balls for tomorrow hope she likes them otherwise it will have to be sandwiches or pasta salad.

I always find lunchtimes a bit of a struggle as well, although it's easier for me as I have access to a microwave a work.

I sometimes make up a pack of Batchelors Savory Rice the night before and stick it in a tupperware tub, it's just as nice cold as it is hot I think.

Are you following extra easy or red / green? You could make chicken egg fried rice either.

Potato salad made with extra light mayo and bits of spring onion / crispy bacon is good for a change too!
 
I generally have leftovers or (most commonly) 1/3 pack savory rice into which I chop random veg e.g. today i have pepper and cherry toms stir in 2 tbsp of syn free dressing topped with either quorn fillet pieces or egg or prawns or cold sliced meat or fish or something else - you get the idea. I have it cold at the mo but might adapt what I bring in for the winter months when I'm more likely to want something hot.
 
Try the following:

SW quiche (Free on EE or green):
Packet of batchelors pasta sauce (free variety)
4 eggs
250g fat free yoghurt
Onions, mushrooms, peppers fried in fry light
Seasoning

Cook the pasta sauce using just water not milk, add eggs, yoghurt, veg and seasoning and mix - if it looks like a bowl of sick you are doing OK! Put into a baking tin and cook at 180 for about half an hour or until set.

Chickpea Dahl loaf (Free on EE or green):
Tin of chickpea dahl (Morrisons or asda are free)
Batchelors savoury rice
4 eggs
Cook the savoury rice per instructions, add tin of chickpeas and eggs. Mix together and put in a loaf tin. Cook at 180 for half an hour or until set. Really yummy and you don't notice the chickpeas if you're not a fan of them!
 
I make up a big batch of something at the beginning of the week and have the same thing for about three days running. I am on Biryani this week, works out at 2 syns a portion and usually includes everything that needs using up in the fridge.

I do the same thing with pasta and couscous.

My favourite couscous is with stewed veg. Any veg will do but I prefer;

Mushrooms, onions, courgette, peppers, green beans.

Fry them up with Fry Light add a good helping of italian herbs, garlic and salt & pepper then add a tin of chopped tomatoes, simmer until cooked through.

Serve hot or cold with the couscous and a mint yoghurt dip. Tasty and filling :)

What about soups? There are loads of soup recipes which you could put in a thermos and take a HEB bread roll to dip in. You could always add rice to pad it out a bit.

You could always use some syns on a ready meal? I know some of the Weight Watcher meals are pretty low on syns for extra easy days and I find it's just enough to keep me from picking at junk during the afternoon.

Experiment with different quiche flavours (although if it's the texture your daughter doesn't like, that probably won't work!)

I'm like some of the other posters, I usually have leftovers for lunch. Left over bolognaise in a jacket potato is always nice.

Do you have a microwave at work? You could always have beans or scrambled egg on toast (HEB!). I've microwaved eggs, take about 2 mins, sometimes a bit longer to make sure they're cooked.

Thanks first one I have tried already I liked but daughter didn't. Nice to take for breakfast. You make it sound so appetizing (lol) but I know what you mean.
