It is a great option for dinner or even to eat cold as a starter...
Hungarian Lesco or Polish Leczo
Ingredients:
8 peppers; best if they are different colors
zucchini/courgettes
squash
mushrooms (optional)
1 onion
2 can of tomatoes
pepper
salt
2 vegetable cubes
chili (red or green)
6 cloves of garlic
bay leaves
parsley/basil
I always add one red pepper from extra special asda/morrison to add that sweetness to the meal (pict attached)
You can also add chicken (mild version) or bacon to the onions so the taste is richer...up to you and the plan you are currently on
and now spices which are optional:
I use cumin, majoran, bay leaves and whole peppercorns if i want the taste when my mum made it ...
or I use: basil, oregano, rosemary, peppercorns if I want more Mediterranean taste...
Wash and peel all veggies, cut them into slices or cubes.
Take one pan for onions and one taller one for veggies.
Spray with Fry light.
Put all sliced veggies into the taller pan and simmer for 20 minutes, it is good if they have a bit 'burn' edges like you were grilling them...
Put garlic, chilies, onions and all spices into the second pan and fry for 10 minutes until onions are soft add canned tomatoes and cover, stir another 5-10 minutes and try the sauce if you used enough salt, pepper to your taste.
Add tomato sauce into the veggies, add veg cubes, bay leaves and 1,5-2 cups of water. Simmer for 20-30 minutes.
Served with boiled rice, potato wedges, chips or baked slices of bread
