Had a delicious meal tonight:
Minced beef and lentil kheema
Serves 4
Free on Extra Easy
454g extra lean minced beef
2 onions chopped
2 red peppers chopped
250g mushrooms finely chopped
... 2 garlic cloves
1 inch ginger grated
1 tsp cumin seeds
1 tsp ground coriander
1/2 tsp turmeric
1 tsp chilli powder
1 tsp mixed spice
1/2 tsp nutmeg
1 tsp cinnamon
500ml Pasatta
250ml water
75g red lentils
Cup of peas
3tbsp fat free natural yogurt
Fry cumin seeds for 20 seconds, add onion and pepper and fry until softened. Add mushrooms, garlic and ginger and cook for further 5 mins.
Add remaining spices and cook for another few mins. Add mince and brown.
Stir in lentil, pasatta and water - cook for 15 mins.
Stir in peas cooking for 5 more mins. Stir through yogurt and serve.
It has quite a few spices etc but it really is worth it honest. Such a depth of flavour
