Vintage Virgin Vegan
Craving a samosa so thought if have a go but of course no pastry so Syn free on green and extra easy - veggie & vegan friendly.
Frozen peas
Two big ish sweet jackets
I onion
I large carrot
Tsp of cumin (use how much spices as you like for your taste)
Tsp tirmtic
2 tsp curry powder
1 veg stock cube
1 garlic clove
Cube the carrot and onion and fry in a little water and stock til soft, add chopped garlic. Soften potatoes in the micro.
Add peas, spices, cut potatoes length ways and scoop out the flesh , add flesh to the mixture adding a tad more water if needed.
Fill spuds with the mixture , top
With HEXA cheese if you want, bake til browned!
Yummy! Hubby loved it too! First picture with reg cheese and second with vegan cheese.
