A delicious baked cheesecake at 2 1/4 syns per slice...
...I'm not teasing you! If my maths is correct - and so often it's not - this cheesecake is just 18 syns for 8 portions. PLEASE tell me if you think differently as I'm quarter way through it
French Cheesecake (from my French vegetarian cook book)
450g of soft cheese (I used Lidl Linessa vitalife 0.2% soft cheese which I worked out at 1 syn per 25g so all 18 syns are here - you could use fat free ricotta)
1/2 cup of sweetner (I used Asda Stevia)
4 eggs separated
zest of 2 lemons
vanilla extract
Mix the cheese, egg yolks, vanilla and sweetner together. In a separete bowl whisk the egg whites until stiff. Carefully fold the eggs whites into the cheese mixture. Put into a 20cm cake tin (you are supposed to have buttered and then floured the tin but I used that oven/tin liner to save syns and had no problem getting it out). Place into a pre-heated oven at 190 for about 40 mins or until a knife comes out clean. Leave to cool. It would be excellent with fresh berries.
