Hi folks! Have not tried the above recipies - I'm too much of a coward to have anything like syrup or honey or even mincemeat in the house, so have come up with some VERY simple and quick MICROWAVE recipies for Scan Bran. Hubby and I both reached target weight together last month, and are both convinced that SB helped us to get there! We've posted these on our own group Facebook page, and also sent them to SW hq. Do hope these help, and would be delighted to read anyones variations!

[FONT=Times New Roman, serif][FONT=Arial, sans-serif](a) Deduct 2½ syns from each recipe if you use [/FONT][FONT=Arial, sans-serif]the Scan Bran as a Healthy Extra “b” choice.[/FONT][/FONT]
[FONT=Arial, sans-serif](b) We use “wizzed” carrot in all our recipes – this gives it more bulk and a more cake like texture.[/FONT]
[FONT=Arial, sans-serif](c) We find pouring boiling water over the whole slices of scan bran for exactly I minute softens it perfectly – not too soggy.[/FONT]
[FONT=Arial, sans-serif](d) It works very well with FROZEN fruit – saves it "evaporating" whilst defrosting![/FONT]

[FONT=Arial, sans-serif]This is a luxurious cake which will satisfy all your cravings, and is quick and easy.[/FONT]
[FONT=Arial, sans-serif]Syns for the whole cake 8 - that's just one syn per slice![/FONT]
[FONT=Arial, sans-serif]Basic Ingredients:[/FONT]
[FONT=Arial, sans-serif]5 Scan Bran (or Oat Bran) - ½ a pack (2½ syns). Only available at Club! [/FONT]
[FONT=Arial, sans-serif]2 large carrots finely grated or wizzed in a mini chopper (about 150 gms)[/FONT]
[FONT=Arial, sans-serif]Low calorie sweetener to taste – 3 or 4 tbsp[/FONT]
[FONT=Arial, sans-serif]3 eggs beaten[/FONT]
[FONT=Arial, sans-serif]Special ingredients:[/FONT]
[FONT=Arial, sans-serif]2 packets of Options Belgium Chocolate (4 syns)[/FONT]
[FONT=Arial, sans-serif]150 gms frozen raspberries (as these are microwaved, you have to count 1½ syns)[/FONT]
[FONT=Arial, sans-serif]Method:[/FONT]
[FONT=Times New Roman, serif][FONT=Arial, sans-serif]1. [/FONT][FONT=Arial, sans-serif]Pour boiling water over the Scan Bran and leave for 1 minute so that it softens, [/FONT]
[FONT=Arial, sans-serif]then drain and mash. [/FONT][/FONT]
[FONT=Times New Roman, serif][FONT=Arial, sans-serif]2. Blend the Scan Bran, carrot, sweetener and Options, mixing very thoroughly. Stir in the frozen raspberries. Then add the beaten eggs and stir until completely mixed. Transfer the mixture into a microwaveable[/FONT][FONT=Arial, sans-serif] dish – about 6½” or 16cm in diameter. [/FONT][/FONT]
[FONT=Arial, sans-serif]3. Microwave on high for about 15 minutes, or until it's cooked. The end product should be reasonably moist. You may need to experiment with the cooking time depending on the power of your microwave. (We turned it out upside down, smoothed it over and gave it another 2 minutes in our 800 watt microwave as the bottom was not completely cooked). BEWARE - if you taste this now, the fruit is BOILING!!![/FONT]

[FONT=Arial, sans-serif]Use anything else “colourful” you can think of, the total should be 150 - 200 gms, much more and the loaf does not stick together well, and is difficult to slice. We've used chopped leeks, capers, peppers, sweetcorn and also added garlic or harissa paste to vary the flavour – use your imagination but check the syns![/FONT]

[FONT=Arial, sans-serif]Exactly the same as before including the 15 minutes cooking time and the 2 minutes turned over, but we used a loaf shaped microwaveable container minimum size 6½” by 4½” or 18cm by 11.5cm.[/FONT]
[FONT=Arial, sans-serif]Slices were great cold with salad or hot with vegetables and would be easy to transport in a lunch box. [/FONT]
