I ate my willpower!
I though that I would start up my own thread with just red day recipes to try and help those who fancy a red day but are not sure what to have, so instead of posting loads of individual recipes, I will post them all on this thread.
I will take pics of each dish as and when I cook them!
To start off we have:-
Slow Cooked Creole Chicken Stew
4 skinless, boneless chicken breast fillets
salt and pepper to taste
Cajun seasoning to taste
1 (400g) tin chopped tomatoes
1 stalk celery, diced
1 green pepper, diced
3 cloves garlic, minced
1 onion, diced
100g (4 oz) mushrooms, sliced
1 fresh green chilli, seeded and chopped

- Place chicken breasts in slow cooker. Season with salt, pepper and Cajun seasoning to taste. Stir in tomatoes, celery, green pepper, garlic, onion, mushrooms and green chilli.
- If you have a slow cooker, cook on Low for 10 to 12 hours, or on High for 5 to 6 hours, alterntively, cook at 180 degrees for approx 1.5 hrs.
