Morocan slow cooked veg stew
oil
small onion ,chopped
clove of garlic,crushed
large butternut squash peeled and cube ( tho i leave the skin on,much easier and doesnt seem to affect the taste)
2 carrots,peeled and sliced
i 400g can of chopped tomatoes
125ml veg stock
1/2 tspn chilli flakes
tsp ground cumin
1/2 tsp cinamon
400g can chick peas,drained
salt and pepper
saute the onions and garlic,add the reamining ingredients ,cover and cook on a very low heat for at least 2 hours OR throw it all in the slow cooker and forget about it ;-)
serve with couscous
