I love spicy food so I thought I would start a thread with some of my favourite recipies - converted to syn free slimming world versions1
Always looking for new ideas so any suggestions would be great
Kobi Keema (Mince & Cabbage Curry)
This is a traditional (I think Pakistani but not sure) recipe - it may sound a bit odd but everyone I've made it for loves it so give it a go!
Made with meat = free red/easy, made with quorn = free green/easy/red
Ingredients:
1lb/500g lean beef/lamb or quorn mince
1 small white cabbage, shredded
1 large white onion, sliced
2 cloves garlic, minced
1 tsp each chilli powder, ground ginger & chat massala (or salt if you can't find)
1/2 tsp each ground turmeric, ground coriander, ground cumin & white pepper
1/4 tsp each ground cloves & ground cinnamon
fry-light (I use butter flavour)
If using quorn mince 1x veggie OXO cube disolved in 190ml hot water
Directions:
- spray large pan with fry-light, add onions & garlic then fry till lightly golden brown
- add spice mix and stir till smell changes from harsh to mellow, 1-2 mins
- stir in mince and brown if using meat - if using quorn add stock at this stage
- tightly lid pan and put on lowest possible heat setting
- leave for 1 hour if using meat or 1/2 hour for quorn
(should be tender and almost dry by now and can be cooled or frozen at this stage if preparing in advance)
- add shredded cabbage, stir through, put the lid back on and leave for another 20 mins
Serve with bombay potatoes, flavoured rice or chapatis and onions in mint-yogurt sauce (will post this later)
