Last night I made a new mash recipe. Put the potatoes on, while they were cooking put 2-3 cloves garlic, about 10 basil leaves, 2 heaped tbsp 0% Total greek yoghurt, splash of water and plenty of salt & pepper in my whizzer. Also chopped about 5 more basil leaves and put to one side.
Then when the potatoes were done I mashed them with this liquid mix and a few squirts Fry Light Buttery, then when done stirred in the rest of the chopped basil with a fork.
Was yum! Although came out a bit of a luminous green colour with all the basil
Next time I'd just use just 1-2 cloves garlic, a bit less basil and probably chuck in a tablespoon or so of lemon juice.
