Have just made mushroom soup as I had a load of mushrooms which needed using.
720g mushrooms
120g onion
Chopped and fried in oil until they've reduced right down.
Added a handful of parsley and covered with hot water - simmered for about 10 minutes and left to cool.
Blitzed in a liquidiser with extra water and plenty of salt and pepper.
I've got 1300g of soup which, at 250g per serving, is 7.5 carbs
