I've been experimenting at home making energy bars. Not a fan of the 'weight loss' or 'protein' chocolate bars, raw pressed fruit or 'flapjacky' type bars.
I want to make a healthy, cooked fruit and seed bar. I've made some tasty ones with base of oatmeal flour and wholegrain flour with fruit and almond butter. However, they're coming out a bit 'heavy.'
Can anyone suggest how to 'lighten' the base recipe up? I want it a more of a cakey/bready consistency but son't want to use ordinary butter or eggs.
I am not the world's best cook so please go easy on me!
