CHICKEN BALTI RECIPE

hi everyone, i made this for our group taster night 2 wks ago and it went down really well, people were asking for recipe.

Spray a large saucepan with frylight and saute 1 large onion and 1 medium eating apple (keep skin on, i use gala apple) chopped for 2 -3 mins. Add 600g of boneless chicken breast cut into chunks, cook for 2mins, then add 2 crushed garlic cloves, 2 sliced carrots, 400g can chopped tomatoes, 3 tbsp pataks balti curry paste, 300ml chicken stock and tbsp of chopped fresh coriander, simmer for 30-40 mins. Then add 50g thawed frozen peas into curry. Heat for a few moments, season and serve (optional: top each portion with 1 tbsp plain low fat yougart.)

The 3 tbsp of balti paste has 6 syns but this serves 4 and works out 1.5 syns a portion serve with boiled rice, girls at my club said it was really good and would stop them ordering the real thing Result!! you can also try pataks tikka masala paste and vegetrian balti replace chicken, 150g cauliflower florets, 300g regular tofu and 300g chickpeas drained, add with the carrots use vegetable stock cube, this can suit everyone. I have been making this once a wk since i started plan and hasnt affected my weight loss journey. ps, i love cooking and will share all my favourite recipies with you all, still cant believe im on a diet :D

Don't forget to syn your apple as well as it is cooked. Also peas are only free on a green or EE day.

Might try this with pork and rice as it sounds so scrummy.

Thanks for pointing out about the apple, forgot about that. Just checked the online syns on slimming world site 28g of cooked eating apple is half a syn so i would probably count it as 1 syn (2 at most) as i only cut four sections off the apple, will weigh it in the future just to be sure. Its a tasty curry and i have lost 21lbs in 10wks which im over the moon about and as i said ive had this curry most wks, cant believe im on a diet that doesnt feel like it, im eating more than i ever did and loving every minute. Hopefully this summer i will be the slim person i have struggled to be for the last 17yrs.Hope you enjoy your version on the curry.xx

Thanks Kwise 1, I make this often it really tastes great. I was at my sw class last night and a new member came over to me and said that she had made a curry from one of the sw recipe books and it was watery and horrible. She said that some of the other members told her about my curry from the taster night and told her to come and get recipe from me. Everyone give it a try i think its really tasty, so glad you enjoyed it.:D
