Mmmm so amazing
1/3rd cup of fresh lemon juice
rind of 1 lemon
1 egg
4 - 5 tbsps of sweetener
Warm the juice and rind in a pan.
Whisk the egg and sweetener in a bowl.
Once the juice is warm - slowly (Very) drizzle the juice into the egg whisking all the time. Do this slowly or you will get scrambled egg!
Whisk for 1 minute and then return to the pan.
Heat the mixture stirring all the time until it thickens and coats a wooden spoon.
Put in an airtight container and store in the fridge (if it makes it there!!)
