Came up with these little scrummies tonight while scrounging for something to eat. I know the whole debate about couscous cake, and whether to syn it or not - in this recipe, I HAVE synned it.
Makes 12.
100g Couscous (synned)
1 apricot weightwatchers (or equivalent) yoghurt
1 banana
2 eggs
1/2 tsp baking powder
3-4 tbs sweetener (to taste)
Preheat oven to 180 degrees C. Cover the couscous with boiling water and leave to soak for ten minutes. In another bowl, mix together the baking powder, sweetener, yoghurt, and slice in the banana thinly, and stir in the eggs, making sure it is thoroughly mixed. Add the soaked couscous to the mix and stir well.
Distribute mixture evenly into 12 cupcake or muffin cases and cook for 40 minutes or until soft and spongy. If you don't have muffin cases, then any tin will do - the whole cake will be 22 syns.
