Saw this on TV at the weekend and thought id give it a try and it was lovely and low points so thought id share.
ingredients:
Butternut squash
Mushrooms
Onion
Spray oil
Salt and pepper
Creme fraiche
Lemon juice
Herbs (they suggested tarragon but i used rosemary)
Cut the top of the butternut squash into thick slices. Trim off the outer skin. So you essentially end up with several thick circular pieces of butternut squash. Place on a baking tray, spray with a little oil, season with salt and pepper and add a clove of garlic. Place in oven at 200C for 20 minutes or until the butternut squash is soft but not falling apart. In the meantime heat some spray oil on the hob. Add the onions and cook slowly for 20 minutes until soft and caramelised. Add the mushrooms and cook until browned. Add the lemon juice and allow to evaporate. Add the creme fraiche (the original recipe used cream but i used weightwatchers creme fraiche and was lovely) and herbs and cook for a further couple of minutes. Spoon over the butternut squash and Voila a low point dinner which was filling and looked quite fancy. Worked it out as 1 point for the amount of creme fraiche i added and none of the other ingredients had points so a really good recipe i think.
