Nice! One thing I think I did read though is that if you're stalling, stick to breast meat which is lower fat. But I don't even eat chicken so may have just made that up....!
Discovered that if you poach chicken breast in light stock and a splash of wine with some herbs and a bit of onion it stays lovely and moist. Nice to boil down the juices at the end and stick in a bit of low fat creme fraiche or quark. Yum!
