Chicken stuffed with bacon and mushroom, topped with cheese (250-400 calories)
I've put the range for the calories as it depends on the size of the chicken breast you use and if you use cheese or not.
1 chicken breast
2/3 mushrooms
2 be good to yourself bacon medallions (18 calories each)
30g be good to yourself cheese
Dry fry (or using 1 cal spray) the mushrooms and bacon diced up
Slice the chicken down the middle
Stuff the mushroom and bacon into the chicken
Then wrap in foil - if using cheese, wrap the foil around the bottom to keep the filling in but so the top is open for the cheese to brown. If not using cheese, you can just wrap it all the way round.
Cook in the oven for 20ish minutes, depending on the size of the chicken then eat and enjoy!
