Christmas Dinner Soup :-)

Last winter, pre slimming world, Marks and Spencer did a christmas dinner soup, which was turkey and veg with tiny little stuffing balls. I was totally obsessed with this soup, and they are doing it again this year! However, they've changed the recipe and its really watery and loaded with cerery (yak!!) this year, so i've just had a bash at making my own. And my word, sucess isn't the word - its blumming delicious!!!

Heres my recipe:

Turkey roasting joint (got one from the Asda whoops section for £2.24 :D) or 2 turkey breasts
2 & 1/2 pints of chicken stock (I used Oxo cubes)
4 potatoes, peeled
3 medium onions
3 cloves of garlic
3 carrots
3 parsnips
several sprouts
Dried sage

Small box of stuffing mix (optional) made as directed and shaped into 24 little little balls, oven cooked for about 20 mins.

Put the turkey joint in the oven and cook as directed.

Lightly fry the rough chopped onions and cloves of garlic in a large soup pan. Add the stock, dried sage and peeled roughly chopped potatoes. Leave to simmer for 25 mins until the potatoes are soft then blitz with the hand blender to make a smooth soup base. Season with salt and pepper.

Peel and chop the carrots and parsnips into no bigger than 1cm pieces, half the sprouts and quarter the halfs. Chop the cooked turkey into small chunks. Add all to the soup base and simmer for 20 minutes until the veg is soft.

You're then done!! This should make about 8 decent portions, so if you make enough little stuffing balls for 3 balls per portion, the syns are hardly anything i'd say (1 per portion). However you could leave out the stuffing and have a syn free soup!

Oh my days, christmas on a spoon! Sounds amazing, I am sooo going to make this. I have been eyeing up those massive turkey legs you can get in Asda for like £1.50 - I am going to slow roast that and then add it at the end. I might add bacon and tiny balls of sausagemeat too - my mind is racing! Just wondering how I could add yorkshire too! Plus as an aftertaste some christmas pudd and brandy butter.... I am getting that scene in my mind of Charlie and The Chocolate Factory where that girl took the 3 course meal chewing gum and blew up like a giant blueberry!!

Yep, you can freeze it :) thats what i've done, portioned it up, frozen it then taken some to work for dinners.

You are very very welcome!! As I said, I lived off the M&S stuff last year and was so looking forward to it again this year but have been left disappointed by their offerings. My own is so much nicer :D

Well I did make it and it was, as suspected, absolutely delicious. I changed it slightly. I am trying to do half SW/half Low Gi Diet as I suffer from PCOS. Here's what I did I put some pearl barley in cold water to soak overnight. I bought a Turkey Leg from Asda, £1.71 - I then chucked that in the slower cooker all day on Monday, then when I got home I rustled up some chicken stock, then boiled the pearl barley for about 20 mins then added cubed carrots and parsnips and quartered brussel sprouts, then I added 3 rashers of raw bacon, then I added the shredded turkey leg - lastly I seasoned with salt, pepper and sage. It was heavenly - I had it for Tue, Wed and Thurs lunch - by Wednesday lunch my colleagues got wind of the aroma and so on Thurs I ended up feeding the three of them and myself! So so delicious. And so so cheap. This is going to be a staple. Thanks for the idea.
 
BEST SOUP EVER!!!!!

I made it earlier. It made a huge portion! My lunch portion didn't seem to dent it!!

I used:
- potatoes
- onions
- garlic
- chicken stock
- turkey breast joint
- dried sage
- salt and pepper
- brussel sprouts
- peas

I would like to try with bacon and or joes sausages next time. Can't wait to go to work this week, just so I can eat it!!
 
I'm so cross, I forgot sage,and found out half way through lol :( Ahhh well mixed herbs it is. I've worked out Asda smart price sage and onion stuffing 85 g is 5 syns for whole lot. X
 
I was just making chicken stew and reading this whilst waiting for it to boil. I fished out the chicken and blended the veg and made a tremendous soup! I will make sure and get some smartprice stuffing and dried sage and see how that makes it turn out next time!

BTW, swirling a teaspoon of turkey jam in your bowl for 1 syn makes a yummy accompaniment!!
 
Oh it tastes Devine! I'm having it for my tea tonight and tomorrow, and I'm having a full 5 syn pack of stuffing each night. Treat. I tweaked it to suit me, I added the parsnip with the potato,onion frylite bits, and blended all that for the base. I didn't fancy chunky parsnip. So I've just got chunky carrots,sprouts,turkey ;)
For two meals I used

1 1/2 chicken stock
1 onion
1 whole garlic
1 parsnip
8 sprouts
1 large potato
2 carrots
2 asda smart cheap turkey breast off cuts. X

your's - like mine - tasted AMAZING - but (no offence) looks a bit odd!! My OH took one look at mine - and refused to taste it! hehe!

His loss!!! All the more for me :)
 
I didn't even offer any to Mr,as he doesn't like sprouts ,and I'm out shopping tomorrow,so I wanted the other half for my tomorrow's tea. I still have not moved to wash up! I really feel like I'm stuffed out on Xmas dinner! Looks a little green in pic lol, it looked nicer in real life. Oh my days. X
