0k guys I have been making these and they are yummy! I read the Dr Atkins book and he says that cocoa powder is allowed on induction as it is considered a spice. So here is what I do:
2 eggs
10g cocoa powder
2tbsps butter
1 tbs splenda
1/2-1 tbsp baking soda
a little single/ double cream
mix everything together and split into 6 muffin trays. put in the oven for 15-25 minutes and viola! They are so yummy and you can have them with a bit of cream on the side. Remember to count the carbs in the cocoa powder. I use bournville and 10 g will give you about 6g carbs for 6 muffins. I also add another gram to be on the safe side as we also need to count the splenda and cream.Enjoy!
