Ok, if someone else has previously posted something similar I apologise.
These turned out to be delish - no chocolate but a definite orangey hit. Turned out crispy on the outside but soft cake like Jaffa cakes in the middle. This made 8 and two days worth of oat bran for cruise. You can adjust the sweetener to suit your taste buds.
Preheat the oven to 180C/350F/Gas 4.
For the cakes, bring a little water to the boil in a pan, then reduce the heat until the water is simmering. Suspend a heatproof bowl over the water (do not allow the base of the bowl to touch the water).Add 2 free range eggs and 2 tblspn sweetener to the bowl and beat continuously for 4-5 minutes, or until the mixture is pale, fluffy and well combined. Add 4tbspn oat bran pre-mixed with a sachet of orange sf jelly powder beating continuously, until a thick batter forms.
Spoon into a shallow bun tray (will bake to a cookie texture type top). Bake for 10 mins, then turn them over for 2-3 mins to crispy up the bottom.
Just made them - ail edit tomorrow to let you know how well they store overnight.
