Easy soup recipe -- what's yours? ( I just bought a hand blender!)

I bought a hand blender in Asda yesterday. Twelve pounds reduced from seventeen, and it's brilliant. Just made a yummy soup which I invented myself.

Vegetable soup

I used half a swede, 1 onion, 3 potatoes, half a marrow and 3 carrots, cut into cubes, sprayed with frylight and roasted at 200 degrees until soft and a little crispy (about an hour)

Added boiled red lentils, a bowlful. I cooked these while I prepped the veg. They went really mushy-- it looked like porridge. Thickened the soup up nicely!

1 veg stock cube made up in boiling water. I put in about 750 ml.

Bring to the boil adding 2 cloves grated garlic, some cumin, chilli flakes, dried coriander...whatever's in the cupboard, really...

Whizzed it all up and it was lovely. Ate it with some sticks of celery instead of bread-- the crunchiness went very nicely with the smooth soup.

What are your favourite soup recipes? Do you have a flavour I can try that isn't my stir-fry staple of garlic, chillies and coriander?

I tend to make a soup out of whatever veg I want to use up! Or if my veg is limited tomato soup with tin tomatoes and pasata
 
I bought a hand blender from Tesco yesterday, but smoke and sparks started coming out of it! Had to resort to making my cauliflower curry with a potato masher!! Nice tho...
 
I have the Good Food Soup book which I adapt the recipes to make the slimming world friendly.

Made potato and Savoy cabbage with bacon - was lush!
1 onion
1 carrot
1 celery stick (I didn't put this in)
1-2 garlic cloves
350-500g floury potatoes, cut into small cubes
1 litre chicken stock
4 rashers of back bacon (fat trimmed)
1/4 medium Savoy cabbage.
Seasoning

Cook all ingredients in a saucepan apart from the bacon. Fry or grill the bacon and add at the end. Whizz the soup to the consistence that you like.
 
I did minestrone soup the other day so simple

I just fry light onion, added some small frozen veg ( diced carrot, swede, and peas). Then a tinned Tom and baked beans, veg stock and some broken up spaghetti. Salt and pepper and bring to boil and simmer for 15 mins. It's so tasty and in one pot.

I made a butternut squash, red pepper and chilli soup yesterday:

2 mini butternut squash, peeled, de-seeded and cubed
2 large red peppers diced (I used Florina the long red ones)
1 medium onion chopped
2 veg stock cubes in as much water as you think you need (sorry I'm not a measuring type)
1/2 red chilli finely shredded - or to taste

Put all of the ingredients into a pan, bring to the boil covered and then simmer for about 40 mins or until the squash is soft. Blend to smooth or just blend half if you like it a bit chunky. Very tasty and good for you!
 
Leek and potato is my favorite at the minute. Leek potato red onion and garlic differs every time depending on how much of each I have in. I drain some of the water off when it's all soft add a stock cube to the soup and blend with my hand blender and add the water back in depending on how thick I fancy it warms me up lovely when I come in late on these snowy night's x
 
SPICED CARROT SOUP

10 medium carrots

1 big onion, or 2 medium ones
1 big tablespoon of mild curry powder mixed with garam masala have done with just curry powder
Chill flakes - ( optional) depending on taste or mood
Chicken bovil stock iv used oxo and veg stock with just as good results
Fry onion in fry light with spices on low for a few minutes, throw in chopped carrots, cover with stock,bring to boil then simmer for 30-40 mins. Whizz up with blender.
 
We make a really nice simple soup - don't really measure quantities though, more of an eye/taste thing.

But it's basically half a dozen carrots, 1 onion, 1 small potato, all chopped into small cubes. Couple of cloves of garlic sliced. Whack in a pan, top with veggie stock, we add quite a bit of tarragon and 3 or 4 chopped finger chillies. Bring to the boil, simmer an reduce. Blend when soft.

The garlic and tarragon give it such a good sweet/smokey flavour xx
 
When I dont have time its a tin of toms, tin of carrots all whizzed up with tiny bit of sweetener and basil (fresh or dry) and S&P.

This week I cooked dried haricot beans in the slow cooker with small box of passata, then threw in some left over green beans, carrots etc. few chickpeas and some seasoning i.e. chilli flakes (they go in most of my cooking much to the horror of hubby :)....... then made some smash potato/herb dumplings and had them on top... it was lovely and filling.
 
bought sweet potato for the first time the other day - made a quiche out of it and im not sure because, its actually sweet! however a friend on weight watchers made butternut squash and sweet potato soup for christmas and her whole family really enjoyed it.....im guessing it was just stock, sweet potato, butternut squash, onion, lots of garlic and herbs!
 
Every day I tend to throw in about 3 handfuls of dried soup mix, add a few extra noodles and a stock cube in the slow cooker... takes all morning and dont have to worry about it.. I used about 40 gr of low fat smoked mattesons sausage today.. about 131 cal per 57 serving. very low cal with the sausage. I have a small slow cooker for two people and I eat all the soup myself!
