Paleo maintenance rocks!
So good and quick! Had one toasted with butter and marmite as a treat and it hit the spot. Much happier with this as opposed to a GF muffin from the supermarket.

Grain-free English muffin - makes 1
INGREDIENTS
1/3 cup Blanched Almond Flour
1 tablespoon Coconut flour
1 Organic large egg
1/4 teaspoon Salt
1/4 teaspoon Baking Soda
1 teaspoon Olive Oil (Or Butter melted (All water can be substituted)
2 tablespoons Water
To make a Cinnamon Raisin Muffin add the following to the recipe.
-1 tsp honey
-1 tbsp Currants or raisins
-1/2 tsp Cinnamon
DIRECTIONS
1. Combine dry ingredients in a bowl and mix with a fork breaking up any clumps.
2. Add the egg, oil and the water and mix well.
3. Grease a ramekin and pour the batter into it. If batter is not pourable add water.
4. Microwave for 2 minutes. Remove, slice in half and toast!
Feel free to make a few at a time and keep in the fridge. I would recommend only one in the microwave at a time.
