Made this yesterday and its the best cake substitute I have had!
1 cup bulgur wheat( or couscous)
FF yoghurt 1 cup
Fresh cherries 10 (not glace)
Sultanas half a cup
sweeteners to taste
vanilla essence
2 eggs
Pinch of cinnamon
Ok prepare the bulgur by putting in a bowl. In 1 cup of boiling water, place your sweteeners( i used 5) and a few drops of van essence, add to bulgur, then leave the bulgur to fluff up.
Meanwhile chop the cherries, and add them to the FF yoghurt. Leave till the yoghurt goes purple.
When bulgur is ready add the 2 beaten eggs, cinnamon, yoghurt cherry mix and the sultanas.
Place in a microwave bowl and micro for 10 minutes, leave a minute
then another 5 minutes.
I lined my cake tin with paper but dont think its necessary as it didnt stick.
Reckon you could use a muller lite, i just cant buy them here. And if you want it mega low syn, use less sultanas Im thinking you only need to syn the sultanas as the cherries in this are fresh not glace
Made 6 hefty slices.
