Mixed bean recipes anyone?

Hi gang i did slimming world about 3-4 years ago and lost 3.5 stone. A stone of that has krept back on so joing again on Wednesday

I have already made up and frozed, beef ragout, chicken and potato curry and Kheema curry. So come wendesday i can pick it up straight away.

Just going through my cupboards and I have the world of tinned mixed beans, some plain and some in chillisauce.

Anyone have any recipe ideas?

Hiya I've got a few,

SUPERSPEED SOUP

1 can mixed bean salad
1 can green lentils
2 cans chopped tomatoes
1 can baked beans
Handful of split lentils
2 large leeks
1 large onion
4 large carrots
2 parsnips
Green, red or yellow pepper
2 beef stock cubes
Salt & pepper
Mixed herbs
Water (enough to cover all ingredients)

Chop all ingredients, cover with water, bring to boil, simmer until tender then blend or leave chunky as you'd prefer .
 
This is a really filling soup.
RED KIDNEY BEAN SOUP

Ingredients
1 Large onion
1 Head celery
1 Red pepper
2 Cloves garlic (optional)
1 Large can tomatoes
1 Can kidney beans
3 tbsp tomato puree
100g red lentils
½ tsp chilli powder
1 tsp cumin
2 pints vegetable stock
1 Can sweetcorn

Chop all fresh veg. Just cover with water, cover and cook for 10-15 minutes. Add all remaining ingredients except sweetcorn. Bring to boil and cook uncovered for 30 minutes. Stir in sweetcorn to heat through. Season with freshly ground pepper to serve.
 
I like making mixed beans into soups as well, or a bean chilli. You could also just bung them into a casserole with other veg and meat if you're using it.
I'm not sure if you'd have to syn them if you did this, but you could make a dip blending the beans with some lemon juice, garlic, yoghurt etc.
 
Id fry off (fry light) onions, add some chili powder - fry for another min then add mixed beans & tin of chopped toms, tin of baked beans and simmer for 20 mins - hay presto free tasty chili x
 
I made a lush chilli tonight with some mixed beans, peppers, onions, mushrooms, courgettes and so on. It was absolitely delicious - so filling and I still have three batches left in the fridge and freezer!
Had with a huge salad to make it EE, but could have brown rice too :) x
 
My daughter wants to make a bean casserole tomorrow so I am going to throw together fried onions, tin mixed beans, tin chopped tomatoes, tin baked beans and a tin of mushy peas, season and see what happens!

Will let you all know what the result in, but it's the mushy pea curry recipes without the curry powder really and that is lovely!
