Now that I am in conso I suddenly realised that I can have cheese again so gave this omelette a go and it was lovely.
1 egg
1 tbs oatbran
2 tbs greek low fat yoghurt
40g (1½oz cheese)
pinch of salt
pinch of ground black pepper
half a red onion (or white)
4 medium sized mushrooms
Wipe non stick frying pan (best to use a small 20cm one if possible) with a bit of oil on a piece of kitchen roll or, pour a drop in and use a silicone brush to coat the bottom and sides of pan.
Dry fry chopped onion and sliced mushrooms for a couple of minutes on a medium heat, I find that they cook better if you put a pan lid over them whilst cooking, keeps them moist.
Put egg, oatbran, salt and pepper in a bowl or measuring jug and give a good mix with a fork.
Add cooked mushrooms and onions to this and mix well.
Give your pan a quick wipe out, then wipe again with a bit of oil.
Pour mix into pan and tip slightly from side to side to ensure mix covers bottom of pan, then sprinkle cheese on top.
Cook on medium heat until bottom of omelette is cooked then turn over using a large spatular.
Cook for a couple minutes more until cooked through.
You may find that it can fall apart when turning over, no probs, just make sure the bits that fall off are turned over in the pan.
A really filling conso meal which I def will make again.
I bought my pan from Wilkinsons for £5 as the other ones were all too wide and the omelettes all came out like pancakes, this one is fine, they come out a lot thicker.
