mushroom stroganoff Slimming world Style --Delicious

just made this for tea and it was lovely so thought id share


1 onion finely chopped ( i used red)
2 garlic cloves crushed
700g passata (i only used 500g)
100ml Vegetable stock (imade with veg oxo cube)
200g green beans
1 red pepper thinly sliced
500g mushrooms quartered
handful of chopped fresh parsley
salt & pepper
80g philidelphia extra light (i used just light chives one)...extra syns
rice
and the recipe calls for 200g fat free fromage frais but i didnt add this.

put your rice on to cook
meanwhile
spray a wok or frying pan with fry light add mushrooms, peppers, onion, garlic and green beans cook for 5-10 mins on low then add passata, parsley and philidelphia and seasoning and simmer for 10 mins

drain the rice (at this point add fromage frais to the stroganoff mixture if using) then serve immediately and add a sprinkling of parsley to garnish

yummy.
 
My mam made me this last Friday, it was yummy :)
