Kebda Iskandarani (Alexandria style liver) (single serving)
125 gram lamb or beef liver, cubed
1/4 onion, finely sliced
1/2 bell pepper (optional) cubed or sliced
1/4 green hot pepper, finely sliced
3 cloves of garlic, crushed
1/4 tomato, finely diced
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
1/4 tsp vinegar
pinch of allspice
12.5g finely chopped parsley
125 gram lamb or beef liver, cubed
1/4 onion, finely sliced
1/2 bell pepper (optional) cubed or sliced
1/4 green hot pepper, finely sliced
3 cloves of garlic, crushed
1/4 tomato, finely diced
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
1/4 tsp vinegar
pinch of allspice
- Saute onion and green pepper until onions are golden brown
- Toss in the remaining ingredients and fry for 30 secs.
- Add the liver and stir fry till done.
- Remove and stir in the following:-
12.5g finely chopped parsley
- Serve warm with fresh pita bread.
