Oaty 'Mc'muffins'

After reading all the magic pancake recipe threads I was inspired to try something for breakfast. I'm wheat intolerant so have been off bread for months and craving egg mcmuffins.

So I used

30g porridge oats
2 eggs
1 x scan bran
1 tsp mixed herbs
1 pinch of dried garlic
1 x veg stock cube crumbled.

Pour on enough boiling water to just cover and leave to soak in before mashing it all together till it's batter-esque. Mix in 2 eggs and 1 tsp of baking powder.

I used rosti rings (cookie cutters would do) and cooked them in a large pan. About 5 minutes on one side till they look mostly cooked, remove the ring and flip to brown the other side.

I cooked some low syn sausage patties (mine are 1.5 syns) and an egg to go with mine.

The oats + SB are my hexb, and the only other syn is the baking powder. So two large mcmuffins for 2 syns.

When I do these again, I'm going to leave the oaty mixture to soak overnight and add the eggs the next day so they're a bit more dense. These are very eggy and very filling and I'll be making them regularly :D

I've got these planned for brunch tomorrow so will try soaking the oats and herbs overnight to see if the texture is a bit better, I think I'll try them with bacon this time. Will update :)
 
Nope, I think they'd be fine without. I'd use the full 35g of oats you can have as a hexb instead though :)
 
yeah good idea.. so im getting full hxb then..

ooo these would be nice with bacon and sausage on yummy!!

does the mix make more than one muffin then..i hate just having the one barm when i have that as my hxb!!
 
The mix made 4 large muffins easily, could make 6 thinner ones if you like but I like my food chunky. It was a bit of an effort to eat them all as I wasn't expecting them to be so filling, hehe! It did really feel like I'd had a treat breakfast though :)

Tomorrows are going to be cooked with a rasher of bacon on each, and maybe some griddled tomatoes and mushrooms too.

The overnight soaking made no difference to the texture so I won't bother again. I think I prefer the sausagey ones over the bacon but these were half a syn instead of 2 hehe :)
 
Think it might make a difference if you used finer milled oats?
Perhaps a quick blitz in the food processor before soaking ?

I don't mind the oaty texture really, they make them seem very filling. Finer oats would work too though, maybe make them a bit more 'muffiny'. Maybe even Ready Brek to get a very fine texture.
 
Less weight for readybreak though.

Oh yes, I prefer mine heavier and more 'rustic' hehe

Ready brek might be better if someone wants a more processed finish and doesn't mind a bit less food.
 
I've been having real trouble adding things to my what can I eat for breckfast/lunch menu so I'll try these as soon as the snow clears and I can get some bran!! Thank you for something tasty looking!

You can try without the scan bran, just use the full 35g porridge oats for a hexb. I just use scan bran in all kinds of things because it does me good :)
 
oooh i think i have to give these a try. I am so bored of the same breakfasts and the sausage and egg one REALLY appeals! Thanks for sharing :)
