Orzotto

I'm attempting my first orzotto tonight! Orzotto is risotto made with pearl barley instead of rice and I thought it would make a nice change to use an alternative grain.

I will be using the recipe below but tweaking it a bit to make it SW friendly, omitting most of the oil, butter and marscapone should do it and I can't see it being too much of a problem. The serious amount of garlic sounds amazing!

Will report back with pictures and thoughts :)

Well, it's lovely, very happy indeed! Omitted the marscapone, oil and butter and it was still gorgeous :D The roasted garlic makes it!

Recommended!

Pearl barley is really odd stuff! The texture is realky strange to start with but got used to it fairly quickly. The orzotto went down a treat with the husband and I have already been asked to make it again ;)

Yeah I do like it in soups etc, I used to make pearl barley risottos when I ate all low GI foods and loved it, but they called it barleyotto or something! Really fancy it now though, looks yum :)

I bought the pearl barley for a stew originally and it was gorgeous but wanted to find other things to do with it so the bag didn't get wasted. I'm gonna try it in soup too! It really is soup weather now :)

I just mentioned this on my diary but for anyone who looks at the recipe - the amount of garlic might sound like a lot but it is just right! Once roasted the flavour of garlic really mellows so you always need more than you think when roasting garlic.

Yum yum. I'm definitely going to make this this week. Thanks for sharing the recipe :)

Just wondered if anyone had had a go at making this? I cooked it again last night - was much better on the second attempt haha!

I tend to use pearl barley in stew too but this looks lovely.
