These paleo bounty bars are amazing!! So simple to make with only 3 ingredients (dark chocolate, coconut oil & dessicated coconut - I omitted the vanilla extract the original recipe calls for). They are super yummy, I'm having to hide them in the freezer out of sight I made mine in silicon cupcake trays, going to invest in some mini silicon trays for next time.
[h=2]Ingredients[/h] Makes 6-8 bars
Spoon a thin layer of melted chocolate into each of the baking cases. Make sure the inner sides of the cases are covered with chocolate in order to coat the coconut mixture.
Place the cases in the fridge for 10-15 mins to set the chocolate.
Mix the coconut oil, dessicated coconut and vanilla extract together in a separate bowl.
Take the cases out of the fridge and spoon in the coconut mixture on top of the layer of chocolate in each case.
Place in the fridge to set for 10-15 mins.
Once set, take out of the fridge and drizzle over the rest of the melted chocolate into each case. Make sure the chocolate fills any gaps at the sides.
Place in the fridge again to set for 10-15 mins.
You can keep these treats in the fridge until you are ready to eat one. Enjoy!

- 6 tbsp coconut oil
- 3 tbsp dessicated coconut
