Anyone know any good recipe for either a tuna or salmon n broccoli pasta bake? :) really fancy one for tea

My tuna pasta recipe, serves two:-

200g of wholewheat pasta shapes, cooked and drained.
1 onion, chopped
1/2 green, yellow, red pepper finely sliced (you could use frozen sliced peppers, as I often do)
200g mushrooms, thinly sliced
1 200g tin of tuna in brine, drained
2 tins chopped tomatoes
1 knorr vegetable stock pot
2 tsp cajun spices
80g reduced fat cheddar, grated
salt and pepper to taste

1) Fry onion in frylight until soft. Add peppers and mushrooms and cook until just starting to wilt.
2) Add Knorr stockpot and stir well until melted. Add tomatoes, cajun seasoning, salt and pepper.
3) Bring to the boil then add tuna. Leave to cook on a gentle heat until the vegetables have softened a little.
4) Mix in the cooked pasta and transfer to an ovenproof dish.
5) Sprinkle over the cheese and cook at 200C for approx 20 minutes.

This recipe is so easy. You can literally chuck any veg in that you want to change it. The cajun spices give it a slight 'kick'.

Serves 4

Ingredients

350mL passata (s)(sff)
150g low fat cheddar cheese (4xHea) or 100g/4=3.5syns each
1 tsp dried parsley
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
Lemon juice (ss)(sff)
150g whole wheat Fusilli (spiral pasta) (ff)
200g tuna in spring water

Method

Boil Fusilli for 12 mins in a salted pan of boiling water, then drain and return to the saucepan.

Breakup the tuna and add to the pasta, season with the herbs, add paprika, pour lemon juice over the mix and blend well.

Transfer to an oven-proof dish and grate cheese over it. Cook for 20 mins, covered with tin foil for 15 mins then removed the foil for the last 5 mins.

Serve with salad.

Pete’s Tuna & Philadelphia Cheese bake

Serves 4
Ingredients
150g Pasta (any Type) (ff)
130g (when drained) Tuna Chunks in spring water (ff)
1 400g Chopped Tomatoes (s)(sff)
250mL Passata (s)(sff)
1/4tsp “Very Lazy” chilli
1/4tsp “Very Lazy” garlic
1tbsp basil herb
1 Onion, finely chopped (s)(sff)
70g Philadelphia Light soft cheese (1 Hea/4=1/4 Hea)

Method

Boil a saucepan of water with salt added, when boiling drop the pasta in and cook for 8 mins, remove while “al dente” and drain.

Spray a saucepan with Fry Light and add the onions, cook until they are soft, add the garlic & chilli, add the chopped tomatoes and passata, cook for 10 mins.

Open the tin of Tuna and drain the spring water from it, add it to the pasta with the tomatoes, mix well, add the Philadelphia cheese and seasoning.

Preheat the oven to 180c and using an oven-proofed dish, sprayed with Fry Light, add the ingredients to it, and the basil.

Cook for 20 mins or until the food is hot, serve with a side salad.

I loosely followed a recepie I found in a book and it turned out great.

Cooked pasta,
Tuna,
Sweetcorn,
spring onions,
Tin of toms,
big dollop of fromage frais,

mix all together, put in dish, cheese on top, in oven untill crispy. I remember making tuna pasta with crushed crisps ontop so sometimes for that bit of a crunch I syn in some breadcrumbs under the cheese.

Another good pasta bake is

Cook Mince, tin toms, cherry toms - halved, Onion, Cinnamon, passata. simmer for abit.
Stir into cooked pasta, Bake in oven.

Bit like a spag bol but cinnamon gives it what I can only describe as a warmer flavour.
Sorry its a bit vague, dont tend to measure free foods, just chuck it in!

Really quick and easy.
