TUNA, TOMATO PENNE (4 SYNS TOTAL)
GREEN DAY or EE DAY
(GREEN DAY - use 113g Tuna per person as HEB)
serves 4
Ingredients
100g dried pasta per person
113g tinned tuna (in brine) per person
Frylight
1 large onion, chopped
1-2 Garlic cloves , crushed
1 Tblsp Tomato Puree
1 400g tin chopped tomatoes
1 pinch sweetener
56g black olives (whole)
2 Tblsp mini capers
Salt & pepper
Parsley
METHOD
To a frying pan, spray frylight and fry the chopped onions and crushed garlic until soft
Add the tinned tomatoes, tomato Puree and a sprinkling of parsley together with a pinch if sweetener. Bring to the boil & simmer for 10-12 mins, stirring occasionally
Meanwhile cook the pasta
Add the tuna, capers & olives and seasoning to the frying pan and stir.
Drain the pasta and add to the frying pan. Stir well and serve
Top with a HEA of grated cheddar.
