I have a curry type dish almost daily, apart from when I eat steak. Its the spices that get me through.
I fry off an onion, a pepper (confession I do use about a tsp of olive oil) when softened, I add the chicken, cook for a couple of mins, then 1 tsp ea curry powder, chilli powder, chopped garlic, approx tsp tomato puree, then I add some water, reduce and finally I add a dollop of philly ex light and a dollop of fat free greek yogurt. Its yummy.
