Proper banoffee pie

needs more willpower!
Finally found the recipe for banoffee pie! Has anyone made it? It looks yummy. Think i'm going to be making it this weekend...

10 reduced fat digestive biscuits, finely crushed
3 medium egg whites
2 x 12g sachets powdered gelatine
75ml/3fl oz boiling water
250g/9oz quark
3 x 200g pots Müllerlight toffee yogurt
3-4 tbsp artificial sweetener
1 tsp vanilla extract
2 bananas

1. Preheat the oven to 190ºC/Gas 5. Line a 20cm/8in springform cake tin with baking parchment.
2. Place the crushed biscuits in a bowl. Lightly beat 1 of the egg whites until frothy and add to the bowl. Stir well, then spoon the mixture into the prepared tin and press evenly over the bottom. Bake in the oven for 15 minutes, then set aside to cool.
3. Dissolve the gelatine in the boiling water.
4. Whisk the quark in a bowl until smooth. Stir in the yogurt, sweetener and vanilla extract.
5. Whisk the 2 remaining egg whites until stiff, then fold into the quark mixture along with the gelatine liquid. Spoon over the prepared biscuit base, smoothing the top with a palette knife, and chill for 4-5 hours, or until set.
6. Remove the pie from the tin and place on a serving plate. Slice the bananas and arrange neatly on top of the pie. Drizzle over some melted dark chocolate (1½ Syns per 1 tsp) if desired, dust with cinnamon and serve cut into wedges.

Serves 8 and is 4 1/2 syns on all days

Ohhh this sounds so yummy! I love love LOVE banoffe pie!! I'm always tempted to make these puddings but it's just me and my OH (whos diabetic) so i would end up eating the whole thing by myself!! :devilangel:

could you make this vegetETARIAN? what would you replace the gelatine and mullier light yougurt for?
many thanks if anyone could help

Sounds delicious....What would we do without Quark and Mullerlite yoghurts, and let's not forget the humble Scan Bran, LOL....

I'm veggie so i'd just use vegi gelatine instead and i've seen some yogurts in asda which are fat free toffee flavour. i'd have to find out the syn value but im sure they'd work instead of mullerlight. I'm going to attempt it anyway! x

I do a 'thing' that hits a similiar spot, but uses 2 x HEbs and 2 syns TOTAL.

Take 56 grams of OatBakes (2 x HEb) and whizz to crumbs. Add a little brown sweetner and place in bottom of tart dish.

Slice a ripe 'nana and place in a layer ontop of crumbs.

Take a tub of Quark and add a sachet of Choc options (used to be a toffee one, but haven't seen it for ages), add sweetner to taste and spread over banana.

To finish, add sweetner and vanilla essence to a small tub of Total 0% and smother over the top as 'cream'.

Sickly, sweet, filling...and just 2 syns! This amount would easily serve 2, but I tend to have it all to myself, on rainy Sunday afternoons, in front of a good/crap film!
