Hi all,
Just made this soup, I adore red thai curry so wanted to try to adapt a sweet potato soup recipe I already have. This is really lovely and I've worked it out at 3PP which is pretty good for lunch
Recipe:
1 Butternut Squash (0PP)
1 Onion (0PP)
20g Red Thai Curry Paste (I used Asda's) (3PP)
1 chicken stock cube (fresh is 0PP) (1PP)
100ml light coconut milk (3pp)
Heat curry paste in pan, add onion. Meanwhile chop butternut squash (stirring onion occasionally). Add to pan. Allow to soften. Make up chicken stock (1 and 1/2 pints) and add to pan. Simmer for 20 mins. Allow to cool, blend.
Serves 2 (possibly 3, add more butternut squash and stock to serve more!)
