Having tried lots of wonderful recipes from this site since joining SW, I thought I'd share a delicious (even if I do say so myself!) quick, cheap & easy 'one pot' chilli that is only 2syns per large serving. I've been making this dish for years - it was the first meal I ever learnt to make & is still my favourite. Coincidentally it's also low in Slimming World syns!
Momma Jones' Vegetarian/Meaty Chilli Con Carne, serves 4, 2syns per serving
Ingredients:
1 large onion chopped
250g Frozen Quorn Mince (replace with extra lean beef mince if you wish)
1 can butter beans drained
1 can kidney beans drained
1 can baked beans
1 can chopped tomatoes
Colman's chilli con carne recipe mix 50g sachet
150ml water
Method:
Place onion, Quorn mince, butter beans, kidney beans, baked beans and chopped tomatoes into a large oven proof dish. Mix well and sprinkle over the chilli con crane recipe mix. Add 150mls water to mixture, stir well and place on lid or cover with tin foil if your dish doesn't have a lid. Cook in a pre-heated 180 degree oven for 1.5hrs (stirring every 30mins).
Serve with pasta and (if desired) 40g reduced fat cheddar from HEA.
