This works well either as a soup especially on PP days (cruise onwards) and can have extra fish or seafood added to make a stew. This is a recipe for 4 as a soup or 2 as a main meal.
Ingredients:
Some spray oil
I onion chopped
100g weight watchers back bacon or turkey rashers, chopped
1 tbsp cornflour (tolerated item)
600ml fish stock made from fish stock cube. If you havent got a fish one then a chicken or vegetable will do (preferably low salt variety)
pinch mace
pinch cayenne papper (or to taste)
300ml skimmed milk
320g pack of fish pie mix (currently £1.70 in tescos frozen section)
2 tbsp of quarkor ) fat plain yoghurt or low fat creme fraiche (tolerated item)
250g pack of mixed shellfish (eg prawns, mussels etc)
some chopped parsley

Method
- heat oil in large pan over medium heat the add onion and bacon. Cook for 8-10 minutes until bacon cooked
- Stir in flour and cook for further 2 minutes
- Pour in stock and bring to gentle simmer.
- Add mace, cayenne pepper and salt and pepper to taste (shouldnt actually need any salt if smoked haddock being used). Then stir in the milk
- Tip fish pie mix into pan and simmer for 4 minutes. Add the fromage frais and shellfish and simmer for 1 minute. check seasoning. Sprinkle with parsley and serve
- On a PV day you could add cauliflower.
