SW bread stuffing!

Serves 4
1 HEB + 1.5 syns per serve

Ingredients

1T olive oil (6 syns)
8 slices nimble white bread (4 x HEB)
2 brown onions
2 large cloves garlic
1T each finely chopped fresh parsley, sage, thyme & rosemary
2 eggs
Salt & pepper
1t chicken stock powder


Chop the bread into cubes and blitz into crumbs in a food processor

Heat the olive oil and sweat the onions and garlic until soft and translucent

Add the bread and chopped herbs, season with salt & pepper and stock powder, stir well. It should be a touch overseasoned as it can easily taste bland when the eggs are added

Take off the heat and allow to cool completely

Add two beaten eggs and mix well

Stuff into the cavity of a medium chicken and roast for 1hr 30 mins and enjoy!
