I've just made this up, I'm not a creater of recipes but desperation calls for desperate measures.
I didn't have any oatbran allowance left and am in desperate need of a sweet fix so I decided to wing it and came up with this.
1 egg beaten
2 generous tablespoons lo fat natural yogurt
1 tsp sweetner
dribble of vanilla essence
Mix it all very very well - starts to resemble a lumpy milk
Grease a fry pan and tip contents into middle of pan. Move it around gently so it spreads.
Cook on a low heat, it may take 5 mins to do the first side, but it will also help cook the other side...similar to cooking an omlette
Once first side is cooked, carefully flip and cook other side.
I then folded in half and half again and put it in a dish.
Whilst pancake is cooking, soak 1 tbsp of Goji Berries in water. This will re-plump them and actually makes them a bit sweeter.
Make up a portion of yogurt with sweetner and a dribble of almond essence.
Once all ingredients are ready, put berries on top of the pancake and pour yogurt over all of it.
VERY YUM! Enjoy xx
