Baked Sweet Potato Hummus
Slimming Eats Recipe
Serves 6
Extra Easy – syn free per serving
Green – syn free per serving
Ingredients
1 400g tin of chick peas, drained (reserve liquid)
2 small sweet potatoes
2 cloves of garlic, crushed
1 teaspoon of cumin
1 teaspoon of paprika
juice of a lemon
4 tablespoons of fat free fromage frais
salt and pepper to season
a little chilli powder to sprinkle on top
Method
Preheat oven to 200c or 400f
Bake sweet potatoes in skins until soft to touch.
Remove skins
Add the chick peas, sweet potato, juice of a lemon, cumin, paprika, garlic and salt and pepper to season and a little of the liquid from the chick peas to a food processor and mix until smooth.
Transfer to a dish, stir in the fat free fromage frais and sprinkle on top with a little chilli powder.
Serve with vegetable crudites for a yummy syn free snack, or use some slices of toasted wholewheat pitta or similar for a HEb.
Store Hummus in a container in the fridge, it should keep for approx 1 week (if it lasts that long)
