Slim Me Down, Scotty!
I decided just to make something from scratch that used up some spices and herbs I had in the cupboard.
Something similar to this may already exist, but I'm just listing what I had/did for reference in case it helps someone else. I imagine this would be nice as a snack, a quick lunch or if made without the mince, the rice mixed with all the other veg and spices would be a nice accompaniment to a chicken breast and some extra veggies.
1 pack of extra lean mince
1 small carton of Passata
Good portion of Sainsbury's bag of frozen veg (onions, carrots and celery)
Good portion of Sainsbury's bag of frozen peppers (red, green and yellow)
1.5 tsp Cumin
1.5 tsp Garam Masala
1.5 tsp Oregano
1.5 tsp Mixed Herbs
1 tsp Chilli Flakes
1 tbsp Tomato purée
Cook all the frozen veg on a frying pan with some Frylight. Add the mince and cook until all the mince is browned. Add the dry spices and mix through. Then, add the passata and tomato purée, mix well and leave to gently simmer on a low/medium heat for 8-10 mins.
In the meantime boil your rice, or if your are feeling lazy, you can just microwave one of those pouches for the sake of a syn, and serve.
As I make all my SW stuff for one, I have 3 further portions left over, one to keep in the fridge for tomorrow, and two more for freezing and using as handy lunches in work. Just take a microwave rice pouch with me and away I go. Tastes delicious and not overly spicy, just a gentle hint, so if you want it spicier, simply add more or even add small chopped chilli's instead of the chilli flakes.
