Tapas SW Style!

Hi All. So thought I would share my 1st attempt at Tapas in general, but also SW friendly as well. I love tapas and am so glad I can eat it whilt still being on plan, but I had to find recipes on the internet and adapt, so thought I would post the recipes on here to save other speople the trouble (plus then I don't have to go and find them all again :))

Here's the dishes I made on Saturday night.

Spanish Meatballs (1 syn per portion)
Chicken in chilli & tomato sauce
Potatas Bravas
Vegetable Paella
Spanish Tortilla
Prawn skewers with chorizo (2.5 syns each)
Paprika pork loin on bread (2 syns each for the bread)
Chicken & Chorizo skewers (2.5 syns each)

The great bit of it was that my friends could eat all of it without worrying about syns, but I could still have a little bit of the synned stuff like bread and chorizo. I also made my own low fat garlic mayo (1/2 a syn a tablespoon).

So, recipes - all this served 4 of us, with leftovers for me & hubs last night

Tomato sauce (used for meatballs, potatas bravas and chicken with chilli)

2 onions
4 garlic cloves
1 jar passata
1 tin chopped tomatoes
1 teaspoon smoked paprika
1 teaspoon cayenne

Soften the onions and garlic in a frying pan (I used frylight and a bit of water)
Chuck in the rest oo the ingredients, cover and simmer for about 1/2 an hour

Potatas Bravas
The potatoes are usually cooked in an inch of oil - which is obviously not very SW friendly, so I cut up 2 baking potatoes in cubes and roasted them in the oven with frylight, 2 garlic cloves, 1/2 a big red chilli, salt & pepper. When done pour over some of the tomato sauce you made.

Chicken with chilli
In a frying pan saute chopped up chicken breast with 1/2 a big red chill and add some of the pre made tomato sauce.

Meatballs.
I used 500g ex lean mince, 50g breadcrumbs (worked out at 1 syn per portion), 1 egg, 1 teaspoon cinnamon, 1 teaspoon smoked paprika. I combined all thei ngredients and then left in the fridge for a hour before cooking. This made about 18 meatballs.

Brown them off then put them in the remaining tomato sauce on a very low heat so they are just simmering for about an hour and a half.

Paprika Pork & Skewers
Time to get out your george foreman if you have one
Cut a Pork loin (fat removed) into 3 pieces) and marinade in lemon juice a teaspoon of paprika for a few hours, then grill. Serve on a small slice of a baguette stype bread (2 syns)

Skewers - are really simple, just put alternating bits of prawn/chicken and chorizo on skewers and grill. I used 2.5 syns worth of chorizo per skewer.

Vegetable paella
soften onion and garlic in a pan with 1 beef tomato (chopped). Add a teaspoon of smoked paprika, some chopped up peppers, paella rice and vegtable stock to cover. Cook until the rice is cooked. Add more stock if it begins to dry out.

Spanish Tortilla
Fry in frylight some onions and garlic. Meanwhile peel & slice a large baking potato thinly and put in water in the microwave for about 10 mins till the potato is soft. Add to the pan. Add 4 beaten eggs, salt and pepper and cook till the underside is set. Then pop under the grilled to finish off the top.

Good luck!!! The planning is the difficult thing I reckon about Tapas - alot of the stuff can be made in advance. In fact I managed to make everything except the skewers and pork loins in advnace, and everything else was done and just needed heating up. I'm going to make a massive batch of that tomato sauce and freeze it so I don't need to make it every time.

If you have one of those party woks they are great for heating up stuff too, and make a bot of a centre piece.

If you want a low (ish) sangria recipe I've got one of those too. Its 5 syns a glass.
1 Bottle of red wine
1 bottle of diet lemonade
2 shots gin
2 shots vodka
sliced up oranges, lemons, frozen so they are basically like ice cubes, as they melt they release flavours so best to add them about 1/2 an hour before serving
Plus some extra ice cubes

The only problem is sticking to 1 glass :)

How many glasses are you supposed to get out of that mix for 5 syns each? :)
 
This sounds yummy! I will have to try it when I next have friends round.
 
That sounds delish. I should try making my own tapas. I put on 3lb last time I had one... oops! I wish someone would open up some slimming world restaurants/take aways, how good would that be!
