Just made this soup.. Yummy PV

1 pint of chicken stock
2 chicken breast fillets, thinly sliced
King prawns
1 root of lemon grass, thinly sliced (or powdered)
5cm piece root ginger, peeled and sliced (or powdered)
120g shiitake mushrooms, halved
100g button mushrooms, sliced
4 spring onions, trimmed and shredded
1 large red chilli, deseeded and sliced
25g pack fresh coriander, very roughly chopped (or powdered)
2 tablespoons curry powder
1 lime, squeezed

Bring the stock to the boil. Add the chicken, lemon grass and ginger then simmer for 10 mins. Remove any froff floating on the top of the water.

Add the rest of the ingredients, bring back to the boil and simmer for 5 mins. Serve.
 
This sounds delightful! I've got shopping to do and will pick up the ingredients. I just found coconut extract in my cupboard. Will pull out a little soup and add it along with nf milk powder to see how it works since coconut Thai soup is my favorite of all time.
