I've just made this and had to share because it's absolutely delicious! I adapted it from my mum's synful version and wasn't sure it'd work but it really has!
2 tins chopped tomatoes or 750g very ripe tomatoes (I used fresh)
4 red chillis with seeds
6 large cloves of garlic
3 thumbs of fresh ginger, peeled and chopped
40 ml nam pla
3 cups granulated sweetener
150 ml red wine vinegar
Blend half the tomatoes, chillis, ginger, garlic and nam pla to a fine puree.
Put the puree, sweetener and vinegar into a deep pan and bring to the boil slowly, stirring constantly. When it boils, turn down to a simmer. Add the remaining tomatoes, diced small.
Skim off the foam and cook gently for 1 to 1 and a half hours, stirring often (scraping the bottom and sides).
Pour into warmed jars, seal and cool to room temperature.
Delicious on a cheese board. We are about to have it with ryvita and syn free Boursin. Yum!!
