This a great one to have in the fridge if you get a bit hungry.
I use one cup of fine bulgur wheat and add 1 cup of boiled water. Leave for 10 mins.
Chop up some fresh parsley and 2 spring onions finely.
Add paprika, salt and pepper and fresh or dried mint.
Add juice of 1 lemon and if you have any, a drizzle of pomegranate concentrate.
Mix everything into the bulgur with a splodge of tomato puree. Refridgerate for at least 1 hour before ( if you can!)
Lovely served wrapped inside lettuce leaves.
