Wine used in cooking

Morning everyone!
I have half a bottle of good quality wine left over from the other night...how restrained :flirt2:

I want to use it to make a paella this week, if I boil the alcohol out of the wine with the stock does it de-syn it????? PLEASE SAY YES or do the values remain the same?

As far as I know, it's just the same as drinking it, so syn it the same way...

The alcohol will evaporate, but all the sugars and calories will remain. I think you'll still have to syn it.

Drats - think I will just tip it down the sink then!! Paella is just as good without the wine!
