1250 cals is great. esp.nice to see it with 'exciting' food as opposedto run of the mill, 'steamed fish with veg' type food!!
Definitely! I would rather eat less but of foods I like as opposed to more of foods that I'm not particularly fond of, such as: nuts; heaping piles of vegetables; grains; soup; fish or porridge. I know they're good for you, and that you should include some healthy food in your diet, but tbh I would get SO bored and would end up falling off the diet wagon - big time.
I think "moderation" is key, so you're not depriving yourself.
