Monday 1st October:

Breakfast: green smoothie, coffee, small slice w/m toast with "fried" egg, spinach and cherry tomatoes

Snack: muller lite, fruit

Dinner: I decided to create a new recipe as I was feeling uninspired with the idea of roast veg pasta. This is big pasta shells stuffed with a mix of roast butternut, blended cottage cheese and cooked/finely chopped spinach. Top with lots of home made tomato sauce and mozzarella :D

We all really enjoyed it - but you do need to like the sweetness of the squash.

Snack: muller lite, plum, tangerine

HXA: mozzarella

HXB: alpen light bar (along with the small slice of toast at breakfast).

Exercise: crazy 30 minute cycle up hilly bumpy tracks and through stubbly fields :D

Hi Mumma, yes and in fact so busy I've failed to keep on top of this diary. There has been some minor slippage but nothing too disastrous - perhaps the worst has been that I've lost count of syns etc so no idea if I'm over or not.... and I've fallen behind with this. Not going to try and go over the last few days, but I WILL update some pics I've taken at some point, as they may be good for inspiration. I got back so late on Wednesday, had a crazy two days and now off to Islay and Jura for research interviewing - this time with my family as it's the end of school term in Scotland for 2 weeks. We'll be away for three nights. I'm going to try to be good! Will update on my return.

Hi all - have been so, so busy. Mostly good busy but lots of anxiousness (seems less drastic than saying "anxiety") over various work events - travel, conferences, and I organised a workshop which went beautifully. Lots of great food too. At the end of it all I had lost 2 lb amazingly (over 3 or 4 weeks though), and the latest weigh in showed a 1 lb gain. So it could have been much worse. As it turns out I'm finding it hard to get back on track - funny what a bit of time off can do. But generally feeling better in my clothes etc. I'm having some time working from home now (even had a couple of days off) to try and get calm again and save some money on the big commute. To try and stay on top of it all I'm going to start from today. I guess I should be trying to stick to my syns daily instead of saving them up right now...

November 2nd:

Breakfast - a banana, and a mars bar crispy cake in the coffee shop (oops) - estimate 5 syns

Lunch - chicken noodle soup with chanterelles (picked today despite the frozen weather!), beetroot tops (the new spinach in our house!), sweetcorn and chilli.

Dinner - have done Britmum's slow cooked Chinese pork, but with a big piece of beef plate (like boiling beef I guess). Hoping it turns out well - will post pics later!

Hi CookiesnCream - thank you! Feeling a bit destressed already :)

We've been having bit of a foodie time here lately - my daughter has become obsessed with cooking (like mother like daughter!) and at 7 is now becoming massively proficient in the kitchen - am so proud! Yesterday we had friends over for dinner - an early bonfire night so we did stuffed potato skins, sausage and bean casserole and mulled cider, which we had outside at the bonfire followed by sparklers and fireworks. The friends brought brownies so I had 2 small ones out of politeness of course! Then 2 marshmallows toasted - yums.

I felt a bit embarrassed out taking photos once they had arrived (we haven't seen these friends for a long time, plus they seem to have put on a lot of weight post baby - both of them so I didn't want to shout about diets). So I only have a wee photo of the leftover beans (all sausages had been eaten!). Never mind though.

Saturday 3rd Nov:

Breakfast: soft scrambled eggs and smoked salmon

Lunch: some of the kids pasta n sauce, bit of a bag of walkers (4 syns) some breadstick bits (1 syn)

Dinner: sausage and bean casserole with tattie skins stuffed with potato, cheese (HEA), lean bacon and onion (sad picture of what was left):

Extras: 3 marshmallows (3 syns), mulled cider - about 450ml (8 syns), 2 hi fi lite bars (HEB)

16 syns yesterday then - oops but not too bad as I don't go anywhere near the 15 most days. And I've lost track of the syns for the week - but I reckon I'm on track.
 
Yesterday was a nice foodie day, being Sunday :) I strayed badly from my syns, but probably had a good few saved up. Problem is I've lost track of them. This week will be different though because I'm basically keeping a track of them here now.

4th November:

Breakfast: I made some flourless pancakes, they were gorgeous - tasted a bit like cheesecake topping. Had a tsp of honey (1 syn):

Awww Bookie!! I got all teary reading about your daughter's love of cooking and her amazing blog! You must be so proud of her! I hope Rosie grows up to enjoy cooking too, no biggie if she doesn't but it's such a passion of mine that to share it with her would be amazing. Mind you my soon to be son may be the foodie, in which case I'll be all over him lol. I don't care as long as at least one of my children has an interest in food/cooking! Food looking fabulous as usual and I'm seriously considering making fresh wholemeal bread to go with the lamb stew I had planned for tonight.... :D

Aw thanks Honey! I don't see why both your children won't grow up loving to cook - IME kids seem to just love getting involved in the cooking. Laura is so self-sufficient now it's scary! Do you do any baking or anything with Rosie yet? Hope the bread turns out well :)

Joanne thank you! I started using my big camera, but found I wasn't managing time wise (I work full time too), so have decided to stick with iPhone pics as they are so much quicker. I think you may have been looking at earlier pics :) Stuffed pasta recipe - did I post it? I'll need to look back at the old post first...
